Ingredients:
Crust:
3 C Flour
3/4 tsp. Salt
1 C Softened Vegan Margarine
1/2 C Water
Filling:
3 C Vegetable Broth
2 Small Potatoes
1 C Carrots
1/2 C Peas
1/2 C Corn
1/2 C Broccoli Florets
1/2 C White Onion
1 3/4 tsp. Cumin
2 Tbsp. Olive Oil
Corn Starch (to your liking)
Directions:Preheat your oven to 425 degrees.
Peal your potatoes and chop into cubes about 1/2 inch x 1/2 inch. Chop your carrots into thin slices no thicker than 1/4 inch. Chop your broccoli into small pieces. Chop your onion into 1/2 inch by 1/2 inch pieces.
If you are using canned corn or peas, drain the liquid then measure.
If you are using frozen corn or peas rinse under warm water then measure.
Saute your onions in your olive oil until they become translucent.
Heat your vegetable broth in a medium size pot until it comes to a boil. Once your broth boils add your cumin and lower your heat to medium. Mix your corn starch according to the directions on the package, then slowly stir in your corn starch until it thickens to your liking. Add vegetables to your mixture and let sit for 15 minutes. Stir frequently so your mixture doesn't scorch.
While you're mixture is cooking on the stove prepare your dough. Mix your flour and salt, slowing fold in your softened margarine until it crumbles. Stir in your water and mix the dough thoroughly with your hands. Once the dough is mixed divide it in half. Roll out half of the dough fairly thin, large enough to cover the bottom and sides of a 9 inch pie dish or similar size casserole dish. Once you have done this, roll out your left over dough to cover the top of your pie.
Once your mixture has been on the stove for 15 minutes, pour it into your pie pan or casserole dish. Take your rolled out dough and lay it over the top of your dish. Press together the two pieces of dough around the edges with your fingers or a fork.
We had a little extra dough so we thought: Why not make some fish cut outs for the top! I mean, why not?
Place in the over for 30 minutes or until your dough is golden brown around the edges.
