Vegan Lasagne

Um... Why is this turning into a vegan recipe blog? Maybe Mark summed it up well when he said "This is what we do with our spare time, figure out how to eat." Well, not all our spare time :)

Anyhow, here is the latest in vegan cooking adventures- Vegan lasagna. Not Kaycee, Mark, nor I had ever made a lasagna before and I think this turned out really well and was surprisingly easy! We ended up eating almost the entire pan, even my not-even-close-to-vegan friend Pace, who joined us for dinner, enjoyed it!

Vegan Lasagna

Ingredients:
9 Lasagna Noodles

Sauce:
1 Jar of Vegan Marinera Sauce (24 oz.)
1 Cup Broccoli (chopped small)
1 Medium Onion (chopped into 1/2 x 1/2 pieces or smaller)
1/2 Cup Olives (sliced)
2 Cloves Garlic (minced or pressed)

"Cheese":
1 Package of Firm Tofu
1/2 Cup Vegan Cream Cheese (we used Tofutti)
1 Tsp. Salt
Spinach

Preheat oven to 350 degrees.

In a large pot boil water and add lasagna noodles, let cook until noodles are soft but firm.

Chop broccoli, onions, olives and garlic. Saute the onions and broccoli until the broccoli is soft and the onions are transparent. Add the garlic and let saute together for 2 minutes continually stirring so as to not over-cook the garlic.

In a food processor combine your tofu, cream cheese, salt and a hand full of spinach. Mix until it turns into a smooth sauce.

Pour a thin layer of marinera on the bottom of a 9 x 13 inch pan. With the remaining marinera, add the vegetables and mix together. Once your noodles are done cooking, add 3 of them going long ways across your sauce. Then spread a layer of your "cheese" or tofu mixture on top of the noodles. Then add a layer or uncooked spinach leaves across your "cheese." Next add a layer of your marinera mixture. Then add another layer of lasagna noodles. Then another layer of "cheese." Then another layer of spinach leaves. Then a layer of your marinera mixtures. Then add another layer of lasagna noodles. Then add a layer of your marinera mixture as the top layer.
