Vegan Birthday Doughnuts


I had a really enjoyable couple of days celebrating my birthday with family and friends. I am really lucky to have so many wonderful people to share my celebrations and everyday adventures with! Thanks to everyone who made my day(s) special!

Usually, in our family, you get doughnuts for birthday breakfast. My sister decided that this tradition would not be broken just because of my lifestyle and the fact that vegan doughnuts are so hard to come by in this area. Because she is the best ever, she found a recipe online for vegan chocolate glazed doughnuts and we cooked up a couple batches and brought them to work with us. It is always fun hanging out with my sister, in the kitchen or other places. I think we laughed off all doughnut calories consumed! This recipe was delicious and extremely easy! The doughnuts got better with each bite!

Vegan Chocolate Glazed Doughnuts

What You Need-
For Doughnuts-
-1 cup non-dairy milk (we used soy)
-1 t lemon juice
-2 t vanilla
-3 T maple syrup
-1/4 c brown sugar
-2 cups wheat flour (we used 1 cup of wheat and 1 of white to diminish the wheaty taste)
-1/4 cup cocoa
-1/2 t salt
-1/2 t baking soda
-1/2 t baking powder
-1/4 c of chocolate chips (chopped fine)

For Glaze-
- 1 c powdered sugar
-1 t vanilla
-1 T maple syrup
-1 T non dairy milk (again, we used soy)


Preheat oven to 350. In a small bowl, whisk milk lemon juice maple syrup, brown sugar, and vanilla until foamy and bubbly. In a large bowl, combine flour, cocoa, salt, baking powder, baking soda, and chocolate chips. Pour wet mix into dry and mix well (mixture will be thick). Roll between hands and shape into doughnuts. (if the dough is a little sticky, put flour on your hands before rolling) Place on greased cookie sheet and bake for 15 minutes. Remove and let cool completely.
While doughnuts are baking, mix glaze ingredients. Once doughnuts are cool, submerge in glaze and place on wire rack to drip, dry and harden.

Makes 9-12 doughnuts


This is Jen and I hanging out cooking doughnuts. We had a little too much fun, as usual. She is pretty much my favorite sister :). I'm very lucky to know such an awesome, thoughtful, and fun person- let alone get to live with her and be related to her as well! She is stuck with me!
